Sunflower oil – ½ cup
Thick curd – ½ cup
Milk – ½ cup
Powdered sugar – ¾ cup
Turmeric powder – ⅛ tsp
Maida – ½ cup
Baking powder – ½ tsp
Baking soda – ½ tsp
Salt – ¼ tsp
Rava – 1 cup + 2 tbsp
Essence of choice – 1 tsp
Flour coated tutti fruiti – 2 ½ tbsp
Hi everyone, today I am here with an easy peasy cake recipe which anybody can make at home without any hassle..
To prepare the batter, into a large mixing bowl, add half a cup of sunflower oil, half a cup of thick a card which is not very sad and half a cup of raw or boiled milk and mix everything well with a hand whisk until well combined.
Into this mixture, add ¾ cup of powdered sugar, two pinches of turmeric powder and mix well again.
If you do not have a measuring cup at home, you can use normal drinking glasses to measure all the ingredients.. just make sure to use the same glass to measure all the ingredients.
Next, add half a cup of Maida, half teaspoon of baking powder and half teaspoon of baking soda, a quarter teaspoon of salt through a sieve into the mixing bowl and mix well..
Next, add a cup and two tbsp of rava and mix well.. you can add more flour or more milk to adjust the consistency of the batter.
After adding the Rava, mix really well and add any essence of your choice. I am adding 1 teaspoon of butterscotch essence.. you can use any essence such as vanilla essence of pineapple essence or even cardamom powder to flavour the cake..
Next, lightly coat two and half tablespoons of tutti-frutti in some plain flour and add it to the batter and mix gently.. do not mix vigorously after adding the tutti-frutti.
The tutti-frutti is covered in plain flour to avoid it from settling at the bottom of the cake while baking.
With this, or batter is ready to be poured into a cake tin that has been lined with a butter paper and greased with some butter or oil and dusted with some plain flour..
To dust the cake tin in plain flour, apply a thin layer of oil or butter into the cake tin and spread a small quantity of the plain flour inside the tin and then tap it to get rid of the excess flour..
When the cake tin is ready, transfer the batter into the cake tin and the batter should be at least up to three by fourth of the tin and not more than that.. you can also sprinkle a few more tutti-frutti on top of the cake..
To bake the cake, I am going to use an earthen pot today..
Place the port on a medium to low flame so that it can heat up slowly without producing smoke.
Once the port turns hot to touch, place a base inside the pot so that the cake has an elevated base to bake.
Place the cake tin on top of the base and then close the pot with an airtight lid and let it cook on the lowest flame possible for around one hour and 45 minutes.. keep the flame as low as possible as the pot can retain heat for a long period of time and we do not want to burn the cake.
You can keep checking in between if the cake is fully cooked by inserting a toothpick or a knife or by touching the surface and checking the colour.
Once ready, you immediately move it out of the pan and let it cool down completely before you de-mould the cake and cut..
