Ingredients:
Potato – 2 (Boiled and mashed)
Carrot – 1 (Cut into small pieces)
Onion – 4 small (Thinly sliced)
Green chilly – 3
Ginger – 1 piece (Crushed)
Curry leaves
Turmeric powder – ¼ tsp
Garam masala – 1 tsp
Mustard seeds – 1 tsp
Cumin seeds – ¼ tsp
Curd – 3 tbsp
Peanuts – 1 handful (Unroasted)
Salt
Oil
Kasoori methi
Steps:
Heat oil in a pan.
Add the peanuts and roast them for 3-4 minutes.
Lower the flame and add mustard seeds.
Add cumin seeds, onion, ginger, green chilly and curry leaves.
Add carrots.
Once the onion becomes soft, add boiled and mashed potatoes.
Add turmeric powder and mix well.
Add garam masala.
Add coriander leaves / kasoori methi or both.
Add salt and mix well.
Cover and cook for 2 minutes on medium flame.
Pulse curd and 2 glass water in the mixie.
Add this to the curry.
Adjust the flavors and bring the curry to boil.
Switch off and serve the curry with chapathi.
