RICE FLOUR LADDOO

Rice flour – 1 cup
Water – 1 cup
Milk – 14 tbsp, boiled and reduced to 7 tbsp
Grated coconut – 1 ½ cup
Sugar – 1cup
Ghee – 1 tbsp + 3 tbsp
Cardamom powder – ¾ tsp
Salt – 2 pinches
Oil – to fry

Hi everyone, today I am going to make rice flour laddu, which is a sweet recipe for Diwali..

To make the laddoos, I have taken a cup of rice flour in a large bowl..

Add 2 pinches of salt to the rice flour..

If you do not have a measuring cup, you can use normal drinking glasses or cups to measure the ingredients..make sure to use the same glass or cup to measure all the ingredients throughout the recipe..

To one cup of rice flour, I am going to add exactly one cup of boiling hot water and make it into a very thick dough, just like you would make dough for kozhukatta..

Make sure to use boiling hot water, else the flour will not form a dough which holds..

Next , we need to fry the dough to make laddoos..

For that heat some oil in a pan and take little by little of the dough, and gently shape it into thin circles and add it into the oil and fry until it turns golden and crispy

Make sure that they are really fried and crispy..

Once they are fried, let them rest for a little while until they come down to nearly room temperature.

When they cool down, you can add them into the mixer grinder and grind it into coarse powder.. you should not grind it for too long as it might turn into a large lumpy dough again..

Next boil 14 tablespoons of milk in a pan and and reduce it to 7 tbsp..

Once the fried dough is cooled, add it to the mixer grinder and grind it into powder.. this might take a little time to grind well..

This rice flour cake will not grind well if you haven’t cooked it through..

Next, heat a tablespoon of ghee in a pan and add one and half cups of grated coconut into the pan and roast until the coconut turns dry..

Once all the moisture from the coconut is lost, you can add it into the mixer grinder and gently crush, so that the flakes are smaller and similar in size..

If you are using store-bought desiccated coconut, you may skip the grinding step.

Next, to prepare the laddu, again add 2 to 3 tablespoons of ghee into the same pan.

Once the ghee melts in the pan, add the fried and powder rice flour and sautè just until it all heats up in the ghee ..

(If there are lumps of the fried dough gently crush with your hands and added to the ghee)

After the fried and powdered rice dough is heated up, add a cup of powdered sugar, the crushed coconut and cardamom powder to taste, and turn off the flame..

Make sure to turn off the flame after you add the sugar..

After adding all the ingredients together mix it well to combine and then add the boiled and reduced 7tbsp milk..

After you have mixed the milk with the rest of the ingredients well, let it sit and set in the pan and come down to room temperature

When the dough comes down to a temperature where you can handle it with your hands, shape them into laddoos and garnish with a raisin or any other nut, if you like to.

Laddoos are now ready to be served!!
