INGREDIENTS:

This recipe will make 8 Samosas.
FOR CRUST
1/2 cup all purpose flour
1/2 tablespoon sooji
1/4 teaspoon salt
1 tablespoons+ 1 teaspoon oil
1/4 cup -1tablespoon look warm water
FOR FILLING
3 red large potatoes
1/2 cup green peas
2 chopped green chilly seeded
1 teaspoon grated ginger
½ teaspoon cumin seed
1 teaspoon coriander powder
½ teaspoon garam masala (garam masala is a mixture of different spices)
1 teaspoon mango powder
2 tablespoons oil

Dough
1/2 cup all purpose flour (plain flour, maida)
1/2 tbsp sooji (samolina)
1/4 tsp salt
1-1/2 tbsp oil (canola or vegetable )
For the Filling:
3 boiled potatoes, peeled and chopped into very small cubes
1/2 tsp cumin seeds (jeera)
3 tbsp lukewarm water use as needed 1 tbsp chopped green chilies
1 tsp coriander powder (dhania)
1/4 tsp garam masala
1 tsp mangopowder (amchoor)
1 tsp salt
2 tbsp oil (canola or vegetable)
1/2 cup green peas (I am using frozen peas)

hi Manjula aunty, I have a question, we are deep frying these samosas so why do we need to fry the filling before???

very nice, you do make it look sooooooooooooooooo easy, but it does make me want to make some. God Bless You.
My mom's method is to make all samosas and refrigerate them for at least an hour, before frying them in medium-low flame, that makes very crispy samosas!
