Mix yogurt, cornstarch, cumin seeds, cilantro, and green chilies in a large bowl. Add cauliflower florets and coat evenly. Heat oil in a skillet and shallow fry the cauliflower in batches until golden brown and crispy. Drain on paper towels. For the tomato gravy, mix cornstarch with water. Heat oil, add cumin seeds, then tomato puree and ginger.

Add red chili powder, coriander powder, and turmeric, and sauté until oil separates. Add cornstarch paste, cook to desired consistency, then add chopped tomatoes, sugar, garam masala, and cilantro. Stir well and turn off the heat. Serve the crispy cauliflower with the tangy tomato gravy, garnished with cilantro and green chilies. Enjoy as an appetizer or side dish.

Select firm, white cauliflower with green leaves and store uncut in the fridge for up to five days. To prepare, halve and quarter the head to expose the core, then cut out the florets. Cauliflower is rich in fiber, vitamin C, and folic acid, aiding digestion and iron absorption.
