Ingredients
For the batter
1 cup coarse semolina (moti sooji)
1 teaspoon salt adjust to taste
1 finely chopped green chili
1 teaspoon finely grated ginger
1 tablespoon chopped cilantro (hara dhania)
1/4 cup finely chopped cabbage (pata ghobi)
1/2 cup yogurt
1 cup water as needed
1 teaspoon ENO (fruit salt). Readily available in Indian grocery stores.

For the seasoning
1 tablespoon oil
1/4 teaspoon mustard seed (rai)
1/4 teaspoon cumin seeds (jeera)
2 green chilies sliced lengthwise and cut in half.

Utensils for Steaming Idlis
Idli stand – this has 3 to 4 plates stacked over each other. For this recipe I am using the rack that makes 16 Idlis.
Pot with a lid that is large enough to hold the Idli stand.
Alternatively, an egg poacher can work just as well, if you do not have an Idli stand.

  • Eno is a fruit salt which is composed of basically 60% baking soda and 40% citric acid. So if you have these on hand, then you can use this proportion to substitute for ENO. If citric acid is not available, you can use some other souring agent instead along with Baking soda.

  • some ppl do not like soapy flavor of baking soda so they add eno..but yes u can add soda, after all u want sumthin to react with the sour curd n make it light n fluffy..adding cabbage is entirely optional..u can add it or skip it or add carrots, spinach, any vegetable of ur choice..hope that helps!

  • @deepa, if you have stainless plate, you can pour one 'whole big spoon of batter'. You will be able to put only 4 or 5 in one plate and you will not be able to stack it. Grease the plate with oil spray before putting the batter. You don't need a cooker either! In a big pan, boil water and keep some base on top of which you keep the plate.MAke sure it doesn't tilt and cover & steam it for 10-15 mnts. You can always check if its done.
