Navratri Special: Sooji ka halwa recipe | Semolina halwa | How to make Sooji ka Halwa

Learn how to make Sooji Halwa

Ingredients:
1/2 cup Sooji (Rava, semolina)
2 Tbsp milk
1/4 cup clarified butter (ghee)
1/3 cup sugar
1-1/2 cups water
1/8 tsp cardamom powder (elaichi)
few strings saffron (Kaser)

Instructions:
-Boil water with sugar and cardamom powder in a pan over low-medium heat, then set aside.
-Melt ghee in a frying pan over medium heat. Add sooji and roast until golden brown, stirring constantly for about 5 to 8 minutes.
-Slowly add the syrup to the roasted sooji (note: it may splatter), then reduce heat to medium-low and cook for 2-3 minutes.
-Garnish with almonds.

Notes:
-Keep the Halwa slightly softer than desired as it will absorb more water upon cooling.
-Serve hot, garnished with shaved pistachios, almonds, or shredded coconut. Can also be served with paratha or aloo puri for breakfast.

Variations: Use 1 cup milk and 1/2 cup water instead of water for a thicker Halwa. Pour onto a greased plate, garnish, and let cool before cutting into shapes.
