Ingredients:
Dough
•1 cup whole wheat flour (chapatti atta)
•2 tablespoons ghee (clarified butter)
•1/2 teaspoon salt
•About 1/3 cup lukewarm water
Filling
•3/4 cup sattu, flour of roasted chana dal, available in Indian grocery stores
•1/2 teaspoon salt (adjust to taste)
•1/8 teaspoon asafetida (hing)
•1/8 teaspoon turmeric (haldi)
•1/2 teaspoon red chili powder
•1 teaspoon mango powder (amchoor)
•1 teaspoon grated ginger
•1 tablespoon finely chopped green chili (adjust to taste)
•1 teaspoon ghee (clarified butter)
•About ¼ cup water
Potato, and Tomato Chokha
•1 medium size potato boiled peeled and roughly mashed, this will make about 1 cup mash potato
•2 medium size tomato’s roasted peeled and mashed, I have roasted them over the skillet
•Spices we will use half and half to make both Potato and Tomato Chokha
•1 teaspoon salt
•1/4 teaspoon black pepper
•1 teaspoon lemon juice, just for Potato Chokha
•2 teaspoons grated ginger
•2 tablespoons finely chopped green chilies
•2 tablespoons finely chopped cilantro
•2 tablespoons olive oil or mustard oil, I prefer olive oil
