Dabeli Spicy Potato Sandwich | Kachhi Dabeli

For Dabeli Masala:
Roast red chili, coriander, cloves, cumin seeds, cinnamon, and black pepper in a small pan over medium heat for two minutes until aromatic. Grind into a fine powder, yielding about one tablespoon.

For Filling:
Heat oil in a pan over medium heat. Add cumin seeds; once they crackle, add mashed potatoes, spice mix, salt, and tamarind paste. Mix well. Add 1/2 cup water, bring to a boil, and cook on low heat for two minutes until the mixture thickens to a paste. Set aside.

How to Proceed:
Slice buns in half and toast on a skillet with butter until golden. Spread 1/4 cup of the filling on one half of each bun. Top with cilantro chutney, pomegranate seeds, peanuts, and fine sev. Sandwich with the other half of the bun and serve.
