Ingredients:
1 medium eggplant (baingan) cut into 1″ cubes
2 medium russet potatoes (aloo) cut into 1″ cubes
4 medium tomatoes (tamatar) cut into ½ cubes
2 tablespoons chopped cilantro (hara dhania)
1 tablespoon oil
Pinch of asafetida (hing)
1 teaspoon cumin seed
1 chopped green chili adjust to taste
1 teaspoon ginger paste
1 tablespoon coriander powder (dhania powder)
1/2 teaspoon turmeric
1/2 teaspoon paprika (dagi mirch)
1 teaspoon salt adjust to taste
2 tablespoons water
Also needed:
Oil to fry

why fry it ? it has become unhealthy. we can cook it without frying also

Can you write the spices. Specially powder, what was that?
As I am writing, I am eating this dish, simply delicious! Instead of cooking potatoes and eggplant in oil, I roasted them in a 425 oven for 15 minutes, stirred and roasted another 5 minutes so as to cut down on oil and fat calories. I did use the required amount of oil for the spices. Highly recommend!

I just made this for the first time. I didn't do potatoes just eggplant. and I think my oil was not hot enough because the eggplant soaked up too much oil. but the flavour! I used chillies and tomatoes from my own garden. I recommend this recipe. mm mm good.
