Mango Rasam with Neem Flower
INGREDIENTS
Raw Mango – 1
Tamarind Paste – 1 Tsp
Salt – To Taste
Jaggery – Very Little
Dried Neem Flower – 1 Tblsp
Ghee – 1 Tsp
ROAST And POWDER
Red Chillies – 3
Coriander Seeds – 1 Tsp
Thur Dhal – 1 Tblsp
(Use a drop of Ghee, roast and powder)
FOR SEASONING
Mustard Seeds, Asafoetida, 2 Flakes, Garlic Crushed
METHOD
1. Pressure cook raw mango slices with little water for 2 whistles.
2. Cool and puree it in a mixer grinder.
3. Pour enough water to that, mix tamarind extract, salt, jaggery and heat it.
4. Dry roast spices with a drop of ghee and powder.
5. When rasam starts boiling add powdered ingredients.
6. Fry neem flower in ghee, pour on top of rasam.
7. Heat little oil, add mustard seeds, allow to splutter, add asafoetida, crushed garlic and pour over rasam.
8. Remove from heat and serve as it is to drink or serve with cooked rice.
