Vegetable Biryani
INGREDIENTS
Basmati Rice – 1 Cup
Water – 6 Flakes
Ginger-Garlic Paste – 1 1/2 Tsp
Green Chilli – 1
Finely Cut Tomatoes – 1/2 Cup
Mint Leaves – Handful
Dhaniya Powder – 1 1/2 Tsps
Jeera Powder – 1/2 Tsp
Red Chilli Powder – 1 Tsp
Salt – As Required
Garam Masala Powder – 1/2 Tsp
Sliced Vegetables – Potato, Carrot, Beans, Baby Corn, Cauliflower, Chow-Chow – Finger Length pieces – Each 1/2 Cup
Frozen Peas – 1/4 Cup
Oil & Ghee

Masala Spices:
Bay Leaf – 1
Cinnamon – 2 Small Pieces
Cloves – 3
Cardamom – 2
Star Anise & Marathi Moggu – 2 in Each

METHOD
1. Heat oil in a pressure pan/cooker.
2. Add masala spices, garlic, green chillies and then onion.
3. Fry for a minute. Add ginger-garlic paste and then tomatoes.
4. Add vegetables one by one, saute well. Cut mint leaves and add to that.
5. Sprinkle Dhaniya powder, Jeera powder, red chilli powder, turmeric powder, salt and mix well.
6. Add washed Basmati rice. Mix gently, pour boiling hot water.
7. Mix well, allow it to boil once. Close with lid. Keep vent weight on top. Reduce flame and cook for 10 minutes.
8. Open lid. Add ghee, mix gently and serve hot with raita/curd pachadi.
