Vangi Bath
INGREDIENTS
Rice – 1 Cup (200gms)
(cooked & separated to grains)
Long Green Brinjals – 1/4 Kg
Sliced Onions – 100 gms
Salt – As Required
Vangi Bhath Masala Powder – 2 Tsps
Lemon – 1 (squeezed)
Oil – 2 Tblsps
Mustard Seeds – 1/2 Tsp
Black Gram DHal – 1 Tsp
Bengal Gram Dhal – 1 1/2 tsp
Broken Cashewnuts – 10
Curry Leaves – 1 Spring
Asafoetida Powder – 3 Pinches
(Roast in Ghee & Powder Together)
Vangi Bhath Powder:
Cinnamon – 1 stick
Cloves – 3
Bengal Gram Dhal – 2 tblsps
Coriander Seeds (Dhania) – 1 Tblsp
Fenugreek – 1/2 Tsp
Red Chillies – 6
Grated Dry Coconut – 1 1/2 Tblsps
METHOD
1. Cook rice till each grain is separate, cool and separate the grains using a fork.
2. Slice the brinjals lenthwise. Keep immersed in water to which little salt is added to prevent browning.
3. Heat little oil, fry the seasonings and pour over cooked rice.
4. Heat more oil, fry onions, brinjals in low flame until it is roasted well.
5. Add cooked rice, salt, vangi bhath powder and mix well.
6. Squeeze lemon juice, mix properly and serve.
