Ullunthan Kozhukkattai (Stuffing)
INGREDIENTS
Black Gram Dhal – 1 cup
Green Chillies – 2
Salt – 1/2 Tsp
Coriander leaves – 1 Tblsp
Oil – 1 Tblsp
Mustard Seeds – 1/2 Tsp

METHOD
1. Wash Dhal, grind it with green chillies, salt to a coarse paste. Take it in a bowl.
2. Run mixie with little water using whipper mode.
3. Heat oil in a pan. Add mustard, allow to crackle and pour 2 tblsps of mixie washed water.
4. Add coarse dhal paste, stir constantly till it turns thick.
5. Remove from fire. Mix cut coriander leaves, prepare medium sized balls.

To Prepare Kozhukkattai:
Prepare small lemon sized balls from the dough. Flatten and make a cup using finger tips. Keep stuffing inside, close and seal it. Arrange on a Idli plate with a banana leaf underneath. Steam cook for 3 to 4 minutes.

Ullunthan Kozhukkattai (Outer Dough)
(Base Dough Common to all the stuffings using rice flour)
INGREDIENTS
Processed Rice Flour (washed, dried & milled) – 1 Cup
Water – 1 1/2cups
Salt – 1/4 Tsp
Oil – 1 Tsp

METHOD
1. Heat water with salt, oil in a heavy deep vessel. (Do not use kadai)
2. When it starts boiling add flour as a heap in the centre. Insert a ladle.
3. Reduce flame to low, close with a lid.
4. Cook for 7 minutes.
5. Take out, mix quickly and knead to a smooth, soft dough sprinkling more water if necessary while it is still bearably warm to touch.
