Murukku – Thenkuzhal
INGREDIENTS
Raw Rice Flour – 4 Cups
Roasted Urad Flour – 1/2 Cup
White Sesame Seeds – 1 Tblsp
Salt – As Required
Hot Oil – For the Dough & For Deep Frying
METHOD
1. Roast black gram dhal until it gets heated.
2. Powder it, Sift it and then measure.
3. Mix rice flour, urad flour, salt, sesame seeds in a deep bowl.
4. Pour 2 ladle full of hot oil.
5. Mix well using finger tips.
6. Divide the flour to four parts.
7. Add water, knead to a dough.
8. Apply oil to the murukku maker with three eyed disc in it.
9. Squeeze to obtain small murukkus on a cloth or greased polythene sheet.
10. Transfer to hot oil and deep fry till crisp. Cool down and pack in airtight container.

Dear mam, i soak the raw rice for 1 hour and then dry in the sun for a couple of hours. Then i mill grind it. Is this the correct way to prepare the flour for this muruku? I am a bit confused as some people say dry rice in shade and grind when it is still wet. But i find this results in chewy texture of end product. Is my way of preparing the rice flour correct??
