SWEET POTATO BITTER GOURD KARA KULAMBU : Mallika Badrinath Recipes

Ingredients:
Sweet potato – 250 grms
Small bitter gourd (sliced) – 5
Tamarind extract diluted – as required
Turmeric powder – ¼ tsp
Salt – to taste

GRIND TOGETHER:
Roast red chillies – 7
Coriander seeds – 1 tbl.spn
Fenugreek seeds – 1 tsp
Grated fresh coconut – ½ cup
Tomato – 1

For Seasoning:
Oil – 1 tsp
Mustard seeds, curry leaves, asafoetida.

Method:
1. Scrape and slice sweet potato to thin broad pieces.
2. Slice bitter gourd to thin rounds.
3. Boil both in diluted tamarind extract, turmeric powder and little salt.
4. Dry roast red chillies, coriander seeds, fenugreek together in a hot pan until golden brown.
5. Add coconut at the end and remove from fire.
6. Grind it together first to a coarse powder , chopped tomato and grind to a paste.
7. Add it to cooked vegetables with enough salt and boil till thick.
8. Heat oil adds seasonings and pour over kulambu.
