Rice & Coconut Adai
INGREDIENTS
Par Boiled Rice (Idli Rice) – 1 Cup
Green Gram Dhal – 1/4 Cup
Soaked Bengal Gram Dhal – 1 Tblsp
Grated Fresh Coconut – 1/2 Cup
Salt – To Taste
Red Chillies – 3
Cumin Seeds – 1/2 Tsp
Tamarind (Soaked) – Small Lemon Size
Curry Leaves – Few
Mustard Seeds – 1/4 Tsp
Oil
METHOD
1. Wash and soak rice in a very hot water for 2 hours.
2. Grind it with red chilli, coconut, cumin seeds, tamarind and salt to thick paste.
3. Add washed green gram dhal (do not soak) at the end and grind once at low speed.
4. Heat oil, tamper with mustard seeds and pour over the dough with finely cut curry leaves.
5. Heat a flat fry pan.
6. Put handful of dough directly on it using wet hands.
7. Pierce a hole in the centre, add oil around and cook till golden underneath.
8. Turn over and cook with more oil if necessary.
