More Kulambu with Urundai
INGREDIENTS
For Urundai (Steamed Balls):
Thur Dhal – 1/2 Cup
Black Gram Dhal (Urad) – 1 Tblspn
Finely Cut Onions – 1/4 Cup
Ginger – Small Piece
Green Chilli – 1
Salt – To Taste
Finely Cut Coriander Leaves – 1 Tblsp

For Kulambu:
Grind Together:
Grated Fresh Coconut – 1/2 Cup
Roasted Gram (Chutney Dhal) – 1 1/2 Tblsp
Green Chilli – 1
Red Chillies – 3
Cumin Seeds – 1 Tsp
Turmeric Powder – 1/2 Tsp
Other Ingredients:
Sour Curds (Whipped) – 1 1/2 Cups
Salt – To Taste

For Tampering:
Oil – 2 Tsps
Mustard Seeds,
Urad Dhal,
Fenugreek,
Cumin Seeds,
Curry Leaves,
Asafoetida Powder

METHOD
1. Soak Thur Dhal and Black Gram Dhal together for 1 hour.
2. Strain water and grind coarsely with green chilli and salt.
3. Add Onions, Coriander and prepare medium lemon sized balls.
4. Steam cook for 10 mins. Keep aside.
5. For Gravy: Grind mentioned ingredients to smooth paste.
6. Dilute it with water, butter milk. Add salt and boil.
7. When it starts boiling, add steamed balls and switch off the stove.
8. Heat little oil, add tampering ingredients, pour over.
9. Add coriander leaves and served with cooked rice.

  • 1/2 C Toor dhal, 1 Tbsp Urad dhal, 1 inch ginger piece, 1/4 C fresh cilantro, 1 medium red onion, 1-2 green chills, 1 tsp salt.  Soak dhal 1 hour and grind with green chili & ginger but grind without water.  Add cilantro, onion & salt and form balls.  Stream for 7 minutes in a pressure cooker.  For the Gravy,  1/2 C   fresh coconut,  1/2 Tbsp roasted gram, 3-5 roasted red chili dry, 1/2 tsp turmeric powder, 1 1/2 C buttermilk, 1 tsp cumin seeds.  For the TEMPERING:  2 Tbsp oil, 1 tsp mustard seeds, 1 tsp urad dhal, 1 tsp fenugreek seeds, 1 tsp cumin seeds, 1 tsp yellow split peas, 8 curry leaves, 1/4 C cilantro, 3-4 shakes of Hing.
