Modak Sweet and Spicy Recipe (Kozhukkattai) | Mallika Badrinath | Vinayagar Chaturthi, Kolukattai

INGREDIENTS
Preparation of Basic Outer Dough:
Raw Rice – 1 Cup
Water – 2 Cups
Salt – ¼ Tsp
Oil – 1 Tsp

Method:
1. Wash and soak rice in 1 cup of water for 1 hour.
2. Grind to a smooth paste using the same water.
3. Heat another cup of water in a heavy bottomed vessel along with salt and oil.
4. While it starts boiling pour ground paste and stir constantly until it turns thick and glossy.
5. Switch off the stove and allow it to attain lukewarm. Then knead it to a thick dough.
6. Keep closed until stuffing gets ready.

Coconut Stuffing (Pooranam)
Grated Fresh Coconut – 1 Cup
Grated Jaggery – ½ Cup
Cardamom Powder – ½ Tsp
Finely Chopped Fried Cashewnuts – 1 Tblsp
Roasted Gram Dhal Powder – 1 Tsp

Method:
Mix Coconut and finely grated jaggery together in a kadai. Stir until jaggery melts. Allow the moisture to evaporate. Mix cardamom powder, dhal powder and fried cashewnuts. Remove from stove and cool thoroughly.

Preparation for Modhak/ Kozhukattai:
I METHOD: USING MODAK MAKER
1. Prepare small balls from the dough.
2. Apply oil inside the Modhak maker liberally.
3. Keep the cone shaped portion inside your hands upside down.
4. Press dough through the top hole using finger tip properly and evenly.
5. Keep little stuffing inside and close the hole using little more dough on the top.
6. Prepare all Modhaks with different stuffing and steam cook for 7 minutes.

I METHOD: HANDMADE MODHAK/ KOZHUKATTAI
Flatten the ball. Prepare a cup using fingers. Keep stuffing and fold like a half moon. Twist the edges to form a design. Steam cook.

GREEN GRAM DHAL KOZHUKATTAI
Cooked Green Gram Dhal – 1 Cup
Green Chilli Paste – 1 tsp
Turmeric Powder – ¼ Tsp
Salt – To Taste
Grated Fresh Coconut – 1 Tblsp
Chopped Coriander – 1 Tblsp
Lemon – 1
Oil – 1 Tblsp
Mustard, Urad Dhal, Asafoetida
