Mint & Ginger Squash
INGREDIENTS
Mint Leaves – 2 Cups
Sugar – 2 Cups
Water – 2 Cups
Citric Acid – 1 1/2 Tsps
Lemon – 1
Ginger – 2 Inches
Salt – 1 Tsp
Green Food Colour – As Required.

METHOD
1. Pluck wash the mint leaves.
2. Spread on a cloth to dry up the moisture.
3. Heat water with sugar, citric acid, salt, scraped ginger. Cut into pieces.
4. Boil for few minutes, add mint leaves and switch off the stove.
5. Keep aside for 2 to 3 hours.
6. Strain, add color and lemon juice.
7. Bottle the concentrate. Whenever needed pour 1 part of syrup in a glass. Mix 3 parts of cold water and serve topped with ice cubes.
