Millet Kuzhipaniyaram
INGREDIENTS
Thinai – 1/2 Cup
Samai – 1/2 Cup
Varagu – 1/2 Cup
Pani Varagu – 1/2 Cup
Black Gram Dhal – 3/4 Cup
Salt – To Taste
Oil – For Frying
To Add Next Day:
Soaked Bengal Gram Dhal – 1 tblsp
Finely Cut Onions – 1/2 Cup
Green Chilli Paste – 1 Tsp
Finely Cut Green – As Desired
Mustard Seeds – 1/2 Tsp
(For Tempering)
METHOD
1. Soak all the millet together for 2 hours.
2. Soak black gram dhal separately for 1 to 2 hours.
3. Grind dhal separately with enough water to a frothy paste.
4. Strain water completely from millet, grind to a coarse paste in a mixie.
5. Mix both together with salt. Allow to ferment until next day morning.
6. Heat little oil, add mustard and than onion. Fry lightly, add chilli paste, cut greens, saute for a while. Allow to cool and mix with the batter.
7. Pour in hot paniyaram pan with enough oil in each pit.
8. Close with a lid and cook. Turn over gently. Fry until golden Serve with coconut chutney.
