MILAGAI BAJJI
Ingredients:
Bajji chillies – 10
Finely cut onions –as required
Oil – for deep fry
For stuffing:
Roasted gram – 2 tsp
Ajwain – 2 pinches
Salt – to taste
Grated dry coconut – 1 tsp
Finely cut onions – 2 tsp
To serve:
Sweet dates chutney
For bajji batter:
Bengal gram flour – 1 cup
Rice flour – ½ cup
Maida – 1 tsp
Salt, chilli powder – ½ tsp
Cooking soda – ¼ tsp
Method:
1. Cut chillies into two pieces if it is long.
2. Scoop out the seeds.
3. Mix onions with powdered ingredients and stuff the chillies.
4. Mix flours together with salt, chilli powder and cooking soda.
5. Prepare a thick batter using just enough water.
6. Heat oil in broad fry pan.
7. Dip the stuffed chillies in the batter and deep fry in hot oil.
8. To serve: slit the chilli bajji in the centre, stuff onions and pour little sweet chutney on top.

  • Dear Mallika Madam, I'm a fan of your cooking. I have almost ALL of your cookbooks. There is a special SWEET sold in co-operative Palm Sugar outlets in certain areas of Tamilnadu that is made of Panai Vellam (Palm Jaggery). It tastes almost like a fudge (slightly resembling the texture and colour of Mysore Pak). COULD YOU PLEASE SHARE the RECIPE for that along with a video?
