Mango Masala Pickle
INGREDIENTS
Small Mangoes – 1/2 Kg
Coriander Seeds (Dhaniya) – 20 gms
Mustard Seeds – 20 gms
Fenugreek – 1/2 Tsp
Salt – 50 gms
Turmeric Powder – 1/2 Tsp
Red Chilli Powder – 40 gms
Asafoetida Powder – 3 Pinches
Oil – 100 ml
METHOD
1. Wash, wipe mangoes and allow to dry up the moisture.
2. Slit lengthwise halfway through and breadth wise also, so that it remains whole or cut lengthwise.
3. Dry and powder coriander, mustard, fenugreek together.
4. Mix with salt, turmeric, chilli and asafoetida.
5. Stuff this in mangoes.
6. Keep Closed for a day.
7. Heat oil and allow to cool thoroughly. Pour it on top of mangoes.
8. Mix daily once.
(NOTE: This pickle gets ready in 10 days)
