MANGO GINGER PICKLE : Mallika Badrinath | Mangai Inji Spicy Pickle

MANGO GINGER PICKLE
Ingredients:
Mango ginger – ¼ kg
Tamarind extract – 1 cup
Salt – 1 ½ tsp
Red chilli powder – 2 tsp
Grated jaggery – little
Oil – 1 ½ tsp
Mustard seeds – ¼ tsp
Asafoetida powder – ¼ tsp
Method:
1. Scrape and slice mango ginger.
2. Add tamarind extract and pressure cook for 5 whistle.
3. Heat oil in a pan, add mustard, asafoetida and cooked mango ginger.
4. Boil for few minutes add salt, jaggery, chilli powder and cook for few more minutes.
