MANGAI SADAM | VEGETARIAN INDIAN RICE RECIPES
INGREDIENTS:
Rice- 1 cup (cooked)
Raw mango – 1 grated
Red chillies – 2 broken
Green chillies- 2
Turmeric powder – ¼ tsp
Salt- to taste
Oil – as req
Coriander leaves – little
Sesoning:
Mustard seeds- ½ tsp
Urad dhal- 1 tsp
Bengal grams- 2 tsp
Cashew nuts broken- 7
Curry leaves- 1 spring
Asafoetida powder- ¼ tsp
Fenugreek powder- 2 pinches
METHOD:
1. Cook rice till just soft.
2. Cool down and seprate the grains using a fork.
3. Heat oil, add seasonings, curry leaves, asafoetida powder broken red chillies and then grated mango.
4. Mix gentlly for 1 min, add turmeric, fenugreek powder, green chilli paste and then cooked rice.
5. Sprinkle salt and mix gently until rice turns hot
6. Serve topped with cut coriander leaves.
