Madras Sambar OR Small Onion Sambar

INGREDIENTS
Cooked Thur Dhal – ½ Cup
Peeled Small Onions – 150 gms
Tomatoes – 2
Tamarind Extract – One Ladle Full
Salt – To Taste
Jaggery – Little

Roast & Powder:
Red Chillies – 10
Coriander Seeds (Dhania) – 1 ½ Tblsp
Fenugreek Seeds – ½ Tsp
Oil – 1 Tsp

For Tampering:
Mustard Seeds – ¼ Tsp
Bengal Gram Dhal – 1 ½ Tsp
Urad Dhal – ½ Tsp
Asafoetida Powder
Curry Leaves

METHOD
1. Roast red chillies and dhania with a drop of ghee.
2. Dry roast fenugreek seeds and powder together.
3. Cook small onions in little water.
4. Add Tamarind extract, salt, little jaggery, tomatoes and allow to boil for few minutes.
5. Add powdered spices, cooked dhal and cook for few more minutes.
6. Heat oil, tamper mustard, add other ingredients and pour over sambar.

  • madam one general question. i bought karrupati a month before and kept in a plastic cover. when i openned it i found some white hairy texture around it. whether i can wash and use that jaggery or it got spoiled so i should throw it. i have no idea what to do.kindly advise me what to do. and how to avoid this circumstance in future.
