KEERAI (Greens) FRIED RICE : Mallika Badrinath Recipes | Simple Spinach Fried Rice

KEERAI FRIED RICE
Ingredients:
Basmati rice – 1 cup cooked
Finely chopped onions – 100 grams
Finely cut mulai keerai – 2 cups
Salt – to taste
Lemon – 1
Oil – for frying
Seasoning:
Mustard seed – ½ tsp
Urad dhal – 1 tsp
Bengal gram dhal – t tsp
Fry and ground together:
Red chillies – 6
Dhaniya – 1 tsp
Fenugreek – ¼ tsp
Cinnamon – 1 small piece
Cloves – 2
Grated coconut – 1 tsp
Method:
1. Heat little oil and fry all the mentioned ingredients to a golden colour.
2. Cool and powder together.
3. Heat oil in a fry pan, add seasoning ingredients.
4. Add oniond, saute to a golden colour, mix finely cut greens.
5. Stir fry add salt , cooked rice, powdered masala spices and fry well
6. Squeeze lemon and serve hot.
