Green Peas Kulcha

INGREDIENTS
For Dough:
Refined Flour — 2 Cups
Dry Yeast — 1 Tsp
Sugar — ½ Tsp
Oil — 2 Tsp
Salt — ½ Tsp
Lukewarm water — Just enough to mix

Stuffing (Crush Coarsely):
Green Peas — ¾ Cup
Ginger — ½ inch piece
Green Chillies — 2
Salt — To Taste

METHOD
1. Boil ½ cup of water until lukewarm.
2. Add Sugar, Yeast and keep closed for ten minutes to activate it.
3. Mix Salt, Oil to the flour.
4. Prepare dough using dissolved yeast water and more warm water as required.
5. Keep closed for few hours until dough raises and doubles in volume (nearly four hours).
6. Crush the stuffing ingredients in a mixer coarsely.
7. Fry well using little oil.
8. Prepare even sized balls from the flour.
9. Flatten, stuff little crushed peas, close well and roll out to a thick disc.
10. Heat a flat pan and bake it with closed lid.
11. Add little oil while turning over or apply little butter after taking out.

  • For kulchas you add baking soda and baking powder, and knead the dough using milk. In naan you use yeast. Would really appreciate if you provide authentic recipes.
