Dum Aloo (Bengali Style)
INGREDIENTS
Small Potatoes – 1/2 kg
Dhaniya Powder – 2 Tsps
Jeera Powder – 1 Tsp
Salt – To Taste
Sugar – 1/2 Tsp
Red Chilli Paste – 1 1/2 Tsps
Garam Masala Powder – 1/2 Tsp
Thick Curds (Whipped) – 100 ml
Grind To Paste:
Onions (Diced) – 3
Ginger – 1 inch piece
To Serve: (Optional)
Fried Cashewnuts
Kismis
Almonds
METHOD
1. Scrape skin, prick with fork and deep fry potatoes in hot oil.
2. Heat oil in a fry pan. Add ground paste and fry well.
3. Add all the masala powder, salt, sugar and whipped curds.
4. Fry till oil separates from the masala.
5. Add very little water. Boil for two minutes.
6. Add fried potatoes. Cook for few minutes in low flame with lid closed.
7. Cook until moisture evaporates. Serve with pulka or kulcha as a dry curry.
