CARROT LEMON KULAMBU (CURRY)
Ingredients:
Thuar dhal – ½ cup cooked
Carrots – 3 sliced and cooked
Peeled garlic – 6 Flakes
Onion – 1 sliced
Tomato – 1 finely cut
Lemon – 1 or 2
Curry leaves – 1 spring
Oil – 2 tsp
Mustard seeds – ¼ tsp
Fenugreek – ¼ tsp
Urad dhal – 1 tsp
Green chillies – 2
Red chillies – 2
Salt – to taste
Asafoetida- 2 pinch
Method:
1. Heat oil, add mustard, ural, fenugreek, curry leaves, red chillies, green chillies and then asafoetida.
2. Add garlic, onion and fry well.
3. When it turns transparent mix with finely chopped tomatoes.
4. Fry for 2 min, add cooked carrots, thuar dhal, with enough water adn salt.
5. Boil for few minutes. Squeeze lemon and serve with rice or chapathi.
