Brinjal Chickpeas Curry
INGREDIENTS
Brinjal — 200 gms
Spinach (Palak) — ½ Bunch
Cooked Chickpeas — 2 Tblsps
Tomato Puree — ¼ Cup
Dhania Powder — 1 Tsp
Red Chilli Powder — ½ Tsp
Dry Mango Powder — ½ Tsp
Salt — To Taste
Oil — For Frying
METHOD
1. Slice Brinjals lengthwise.
2. Pressure cook soaked chickpeas. Drain water.
3. Heat oil in a frying pan and sauté sliced Brinjals until it shrinks.
4. Add finely cut leaves of spinach and sauté for another 2 minutes.
5. Add chickpeas, tomato puree, salt, red chilli powder, dhania powder.
6. Saute gently until moisture evaporates.
