Bittergourd Vathakulambu
INGREDIENTS
Small Onions (Peeled) – 10
Garlic – 7 Flakes
Small Bitter Gourd (Cut Into Small Pieces) – 250 gms
Tamarind Paste – 1 Tblsp
Sambhar Powder – 2 Tsp
Dhania Powder – 1 Tsp
Salt – To Taste
Cooked Red Soybeans – 2 Tblsps
Sesame Oil – 1 Tblsp
Rice Flour – 1 Tblsp
For Tempering:
Mustard Seeds – 1/2 Tsp
Thur Dhal – (Red Gram Dhal) – 1 Tblsp
Fenugreek – 1/4 Tsp
Asafoetida Powder – 3 Pinches
METHOD
1. Heat sesame oil. Add seasonings, asafoetida and then garlic.
2. Saute for a minute. Add sliced small onions.
3. Stir fry, add bittergourd and keep frying for few minutes.
4. Add dhaniya powder, sambhar powder and mix well and then pour tamarind extract.
5. Boil for few minutes. Add cooked soyabeans, salt and boil.
6. Mix rice flour in little water and pour to boiling Kolambu.
7. Remove from fire when it turns thick. Serve with cooked rice.
For non-diabetic little grated jaggery can be added.
