INGREDIENTS
Rice Flakes – 1 Cup
Potato – 2 Grated
Milk – As Required to Soak
Kesar Colour – 2 Pinches
Ghee – As Required
Sugar – 1 1/4 Cup
Saffron – 2 Strands
Cardamom Powder – 1/4 Tsp
Broken Cashews – 10
Kismis – Little (Fried In Ghee)
METHOD
1. Dry roast cleaned rice flakes. Powder it coarsely.
2. Sprinkle milk just enough to soak it.
3. Heat ghee, fry cashewnuts, take out and keep on a plate.
4. Add grated potato, fry well. Pour little water, mix colour and cook until soft.
5. Add sugar, allow to dissolve properly.
6. Add soaked aval, stir well, adding cardamom powder. If necessary little milk can be added.
7. Add more ghee and remove when it is done. Decorate with fried cashews.

Better to add organic colours
Problem with these Indian cooking shows are they don’t tell why you add certain ingredients at specific points. It’s very mechanical. Also potato in Aval Kesari is bewildering
