APPAM DOSAI

INGREDIENTS
Par Boiled Rice — 2 Cups
Raw Rice — 2 Cups
Black Gram Dhal (Urad) — ½ Cup
Salt — To Taste
Sugar — 2 tsps
Cooking Soda — Few Pinches
Oil — As desired
Coconut Extract — From 1 Coconut
(Keep first & second extract separately)

METHOD
1. Soak Raw Rice, Boiled Rice, Urad together in water for 2-3 hours.
2. Grind to smooth, thick paste. Add Salt in the end, after grinding.
3. Allow the batter to ferment until next day morning.
4. Grate coconut; add water and grind in a mixie. Strain to get first extract.
5. To the squeezed pulp add some more water, grind and strain to get second extract.
6. Add second extract, sugar, soda to fermented batter.
7. To the first extract add 2 tsps of sugar, mix well and serve it along with appam.
8. Heat ‘Appam Kadai’ (Small Deep Curved Pan), pour one ladle full of batter and turn it in such a way that the batter sticks to the sides.
9. Add little oil around and close with the lid. Cook in medium flame. Serve with chutney/stew/kurma and coconut milk.

SPINACH APPAM
To the above batter, grind and mix spinach leaves (Palak) and prepare Appam.
