INGREDIENTS
Almonds – ½ cup
Sugar – ½ cup
Water – ¼ cup
Ghee – ¼ cup
Saffron – Few Strands

METHOD
1. Blanch Almonds in hot water and remove the outer skin.
2. Using a cheese grater, grate the Almonds into fine powder like consistency and dry it for a day in shade.
3. Heat sugar with water and boil to over string-like consistency.
4. Add powdered Almond and cook till it blends well.
5. Add Ghee and stir until it leaves the sides of the vessel.

  • Great recipe; thank you, Ms Mallika Badrinath. I have only one suggestion; I would not use any plastic utensils with hot food-stuff. Many plastics are not designed for such use for health reasons. The plastic of the container may not dissolve/deform/decompose at temperature of  hot water but when it happens to touch hot oil, or accidentally the metal cooling vessels, the contact temperature would be lot higher. Here in this recipe, for the pouring the hot barfi, I would suggest a greased stainless steel plate or dinner Thali.  Even a greased ceramic plate may be ok.
