खर्डा मटण बनवण्यासाठी लागणारे साहित्य
• २ चमचे तेल
• बारीक चिरलेला कांदा
• आलं-लसूण पेस्ट
• १/४ चमचा हळद
• ५०० ग्रॅम्स मटण
• १/२ कप पाणी
• चवीनुसार मीठ
• १/२ कप खोवलेलं ओलं खोबरं
• ८~९ हिरव्या मिरच्या
• १०~१२ लसूण पाकळ्या
• १ चमचा पांढरे तीळ
• १” आल्याचे बारीक तुकडे
• कोथिंबीर
• २ चमचे तेल
• १/२ चमचा गरम मसाला (ऐच्छिक)
• चवीनुसार मीठ

Kharda mutton is a Satara special recipe. This recipe is very easy and simple and tastes just yumm. This can be prepared with minimum ingredients and doesn’t need many efforts. This is a real quick recipe and looks also nice. This kharda gives nice taste to the recipe. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.
Ingredients:
• 2 tsp Oil
• Finely chopped Onion
• 1 tsp Ginger-Garlic paste
• 1/4 tsp Turmeric powder
• 500 gm Mutton
• 1/2 cup Water
• Salt to taste
• 1/2 cup shredded fresh Coconut
• 8~9 Green chilies
• 10~12 Garlic cloves
• 1 tsp white Sesame seeds
• 1” finely chopped Ginger
• Coriander leaves
• 2 tsp Oil
• 1/2 tsp Garam masala (Optional)
• Salt to taste
Method:
• Heat up oil in a cooker and add onion.
• Fry until onion turns nice golden.
• When onion turns nice golden add ginger-garlic paste, turmeric powder and fry for about a
minute.
• Add mutton and fry it well with masala.
• When mutton gets nice coating of masala add a little water and mix well.
• Add salt and mix well.
• Close the lid and cook on medium heat until 7-8 whistles.
• For making vatan take fresh coconut, green chilies, garlic, white sesame seeds, ginger,
coriander leaves in a blender jar and blend everything together into smooth paste. You can add
water if needed.
• Vatan is ready.
• Heat up oil in a pan and add vatan in it.
• Fry it for about 6-7 minutes.
• When the masala dries up add garam masala and mix well.
• Adding garam masala is optional.You can skip it if you don’t want.
• Add the stock form mutton first and cook until the masala begins to release oil.
• Add salt and mix well.
• Add cooked mutton and mix well.
• Cook everything well together for another 7-8 minutes. No need to cover it with lid.
• Kharda mutton is all ready.
• You can serve it with jwari bhakari or it goes well with rice too.
