पारंपारिक मराठी रेसिपी सांज्याची पोळी बनवण्यासाठी लागणारे साहित्य
कणिक
• २ कप गव्हाचं पीठ
• चवीनुसार मीठ
• १ कप + २ चमचे पाणी
सांजा
• १ कप बारीक रवा
• १ कप पाणी
• १ कप + २ मोठे चमचे गूळ

Ingredients:
Dough
• 2 cups Wheat flour
• Salt to taste
• 1 cup + 2 tsp Water
Sanja
• 1 cup fine Rava
• 1 1/2 cup Water
• 1 cup +2 tbsp Gudh / Jaggery
• 4 tbsp Ghee
• 1/2 tsp Cardamom powder
• Nutmeg powder
• A pinch of Salt
Sanjyachi Poli
• 1 tsp Ghee
• Water as needed
• Ghee
Method:
Dough
• Mix wheat flour and salt well together and add a little water at a time to knead semisoft dough.
• The dough should have consistency similar to chapati dough.
• Coat the dough with around 2-3 tsp water.
• Cover and rest the dough for at least 30 minutes.
Sanja
• Heat up a pan on medium heat and add rava.
• Roast the rava really good until it gets light golden color.
• Turn off the gas and keep the pan aside.
• For making syrup heat up water in a pan and add gudh and ghee.
• Mix well and cook until gudh melts and the mixture comes to boil.
• Turn the heat to low and add the roasted rava.
• Mix in quickly and cook the mixture until rava is cooked well.
• No nedd to cover the pan. Make sure no lumps of rava are formed.
• When the rava is cooked well and comes together like dough, turn off the gas and add cardamom
powder, nutmeg powder and salt.
• Mix everything well together and sanja is ready. Let it cool down completely.
Sanjyachi Poli
• Take the dough and knead it really good.
• The consistency of sheera and dough should be same. If needed add water and knead the dough
really good.
• Coat the dough with ghee and make small balls from it.
• Take one of it and make it smooth and even.
• Knead the sanja well once and make small balls from it.
• Take one dough ball and make a pari like we make for modal from it.
• Fill in the sheera ball and close the dough ball.
• Remove the excess dough and seal the ball well.
• Spread dry four on the rolling board and your hands too.
• Pat the dough ball into small disc between your palms and roll a chapati from it using rolling pin.
• Heat up a skillet on medium heat and transfer the poli on it.
• If you are using iron pan then season it first. Spread ghee on it and wipe it with a tissue.
• Roast the poli well from both sides.
• When bubbles appear on the poli and lower side is roasted a little, flip it over and roast well form
other side.
• Spread ghee on upper side and flip the poli over.
• Spread ghee on other side and flip it over.
• When the poli is roasted well from both sides, take it off on a wire rack. Sanjyachi poli is ready.
• Serve it with lot of ghee.
•You can make around 12 sanjyachya polya from the proportion we used.
