Today, we are making Latur special upma fry and chutney. This chutney is made from peanuts. This is a popular street food in Latur. I tried it when I was in Latur. I simply loved it. Then I thought why not make this recipe known to all!! I always try to explore new dishes wherever I visit and share those with you!! This is one such recipe. The chutney takes this recipe to next level. If you are bored of having the same breakfast, then this is a good option for you. You can try this recipe at home and drop a comment for me. Ingredients:
Chutney
• 1/2 cup raw Peanuts
• 1 chopped Green chili
• 1~2 pieces of Ginger
• Salt to taste
• Water as needed
Upma Fry
• 1 tbsp Oil
• 1 finely chopped Onion
• 1 tsp Sunday masala
• 1 tsp Red chili powder
• Salt to taste
• Upma
• Finely chopped Coriander leaves
• Water as needed
• Oil as needed
Method:
Chutney
• Soak peanuts in enough water and peel them.
• You can skip peeling if you want.
• Transfer the soaked peanuts into a blender jar and add green chili, ginger and salt.
• Blend it into paste without use of water first.
• Add water and blend it again. Chutney is ready.
Upma Fry
• Heat up oil in a pan and add onion.
• Fry well until onion gets light golden color and add Sunday masala, red chili powder and salt and
mix well. Basic onion masala is ready.
• You can use kala masala or kanda-lasun masala in place of Sunday masala.
• Add upma and mix well. Add coriander leaves and mix well. Basic upma for upma fry is ready.
• Move the upma along the edge of the pan.
• Take small portion of upma at the center and add water. Mix well.
• Add oil in the pan and spread this little upma as thin as possible on that oil.
• Spread it well with a spoon and cook until it turns crispy.
• Take that layer off like dosa and fold it.
• Transfer it into a dish and upma fry is ready.
• Serve the upma, chutney and the dosa together.
