वरण-भात
• १ कप तूरडाळ
• १/४ चमचा हळद
• चिमूटभर हिंग
• १ १/२ कप पाणी
• २ कप आंबेमोहोर तांदूळ
• ३ १/२ कप पाणी
• चवीनुसार मीठ
• जरुरीनुसार पाणी
• चवीनुसार गूळ
• चवीनुसार मीठ
बटाट्याची भाजी
• ५ मध्यम आकाराचे बटाटे
• २ मोठे चमचे तेल
• १/२ चमचा मोहरी
• १/२ चमचा जिरं
• चिमूटभर हिंग
• ३ मध्यम आकाराचे बारीक चिरलेले कांदे
• ४ बारीक चिरलेल्या हिरव्या मिरच्या
• कढीपत्ता
• चिमूटभर मीठ
• १ चमचा आलं-लसूण पेस्ट (ऐच्छिक)
• १/२ चमचा हळद
• चवीनुसार मीठ
• बारीक चिरलेली कोथिंबीर

Today’s recipe is Bachelors’ varan-bhat and batata bhaji. As the name suggests, this recipe is for bachelors. There are lot many buys who stay as paying guests or on flat sharing basis or even in hostel or for newly marrieds too. Some of them may go abroad too!! So, we are starting a bachelors’ recipe series. There will be basic recipes so that they won’t have to sleep empty stomach. I am sure this series will definitely help bachelors. This series is for all those who want to learn basic cooking. I will share perfect proportions and lot many tips and tricks too!!

Ingredients:
Varan-Bhat
• 1 cup Turdal
• Water as needed
• 1/4 tsp Turmeric powder
• A pinch of Hing
• 1 1/2 cup Water
• 2 cups Ambemohor rice
• 3 1/2 cup Water
• Salt to taste
• Water to adjust the consistency
• Gudh to taste
• Salt to taste
Batata Bhaji
• 5 medium size Potatoes
• 2 tbsp Oil
• 1/2 tsp Mustard seeds
• 1/2 tsp Cumin seeds
• 1/4 tsp Hing
• 3 medium size finely chopped Onions
• 4 finely chopped Green chilies
• Curry leaves
• A pinch of Salt
• 1 tsp Ginger-Garlic paste (Optional)
• 1/2 tsp Turmeric powder
• Salt to taste
• Finely chopped Coriander leaves

Method:
Varan-Bhat
• Wash turdal really good 3-4 times and soak it in enough water for 30 minutes.
• Remove the water and add turmeric powder, hing and water. Mix well.
• You can skip the soaking process if you don’t have time. But in that case, you need to cook the dal
longer.
• Wash rice really good 3-4 times and add water and salt. Mix well.
• Place a dish at the base of the cooker and add at least 1” water into the cooker.
• Place dal and at the base and arrange the chopped potato in between the space of the cooker and
dal.
• Place rice on dal and close the lid.
• Cook on medium heat until 3 whistles.
• Or cook on high heat for 5 minutes and then reduce the heat to low. Steam on low heat for 15
minutes.
• Take the cooked dal and cooked potatoes out.
• Place the rice back into the cooker again and close the lid. This will help to keep the rice nice and
hot longer.
• Beat the dal really good with wooden whisk or metal whisk.
• If you don’t have whisk, you can mix the dal really good with a spoon.
• Add water, gudh and salt and mix well.
• Heat up the dal really good just before serving.
Batata Bhaji
• Wash potatoes really good and cut each potato into 2 pieces.
• Heat up oil in a pan and add mustard seeds.
• When mustard seeds pop up, add cumin seeda and let them splutter.
• Add hing, curry leaves, onion, green chilies and salt. Mix well and fry until onion begins to get light
golden color.
• Peel the cooked potatoes and mash them roughly.
• You can chop the potatoes instead of mashing.
• Add ginger-garlic paste and turmeric powder and fry together for about a minute.
• Adding ginger-garlic paste is optional. You can skip it if you don’t want.
• Add potatoes and salt and mix well.
• Cover and steam the bhaji on low to medium heat for about 4-5 minutes.
• Remove the lid and add coriander leaves.
• Mix well and batata bhaji is ready.
• This proportion is for 4 people.
