Malvan special anda curry tastes just awesome and is very easy to make. Anda curry is a very easy and simple recipe. So far we have seen dhaba style anda masala, gavran anda curry, regular anda curry. Today we will see Malvan secial anda curry. This is a fantastic side dish and quick and easy to make. We are making simple vatan or masala. Malvani masala used in this recipe takes it to next level. Do try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.
Ingredients:
• 1/2 cup shredded fresh Coconut
• 7~8 Garlic cloves
• Coriander leaves
• Water
• 3 tsp Oil
• Finely chopped Onion
• 1 medium size finely chopped Tomato
• 1 tbsp Malvani masala
• 1 1/2 tsp Red chili powder
• Hot Water
• Salt to taste
• Boiled Eggs
Method:
• Take fresh coconut, garlic, coriander leaves in a blender jar and blend it dry first.
• Add water and blend everything into paste. Vatan or masala for anda curry is ready.
• Heat up oil in a pan and add onion.
• Fry until onion gets nice, even golden color.
• Add tomato and fry until it is cooked nice and soft.
• Add Malvani masala, red chili powder and fry everything well together for about 2 minutes.
• Add the vatan and fry together for about 3-4 minutes.
• When masala begins to release oil add hot water and mix well.
• You can add water depending upon the consistency of the curry you expect.
• Add salt and mix well.
• Simmer the curry on medium heat for about 5-6 minutes.
• Add eggs and cover it.
• Cook on medium heat for about 5 minutes.
• Turn off the gas and anda curry is all ready.
• You can have the curry with rice or goes well with tandalachi bhakari or jwarichi bhakari or
with chapatti.
