We already have seen many pickle recipes like kairi lonache, awla lonache, gajarache lonache etc. But today we will be making lonache or pickle without oil. You must be thinking how it is possible to make any pickle without oil! So, here is the recipe. It tastes just awesome and is easy to make. You can try this quick recipe at home and drop a comment for me. Do not forget to like, share and subscribe.

Ingredients:
• 1 raw Mango
• 1 tsp Salt
• 1 tbsp Sugar
• 1 tbsp Mustard seeds
• 1 tbsp Cumin seeds
• 1/4 tsp Fenugreek seeds
• 8~10 dry red Chilies
• A little Oil
• A pinch of Hing
• Rock salt

Method:
• Wash kairi really good and dry it.
• Cut kairi into pieces. You can keep the seed or take it out.
• Add salt, sugar, turmeric powder and mix everything well together.
• Transfer the mixture into a glass bottle and close the lid.
• Put the bottle under hot sun for about 2-3 days or if you can’t put it under hot sun, let the jar be
at the room temperature for 2-3 days.
• Take a bowl and put a sieve on it.
• Drain all the water from the mixture through the sieve.
• Heat up a pan on medium heat.
• Add mustard seeds and when these begin to pop up add cumin seeds.
• Roast it a little.
• Turn off the gas and add fenugreek seeds.
• Let the mixture be in the pan for about a minute.
• Transfer everything into a dish.
• In the same pan, heat up oil.
• Add dry red chilies and fry them a little.
• When chilies are roasted, turn off the gas and let it cool down.
• Transfer roasted mustard seeds, cumin seeds, fenugreek seeds, red chilies into a bender jar
and add hing, rock salt, drained water from kairi and blend everything into fine paste.
• You can use regular salt in place of rock salt.
• Masala for lonache is all ready.
• Add this masala into the kairi and mix everything well together.
• Transfer lonache into the glass bottle and rest it for about a week.
• Then the pickle is ready to eat.
• You can store the pickle in freeze. It has shelf life of about 1-2 months in freeze.
