कोवळ्या फणसाची भाजी बनवण्यासाठी लागणारे साहित्य
• २५० ग्रॅम चिरलेला कोवळा फणस
• २~३ लसूण पाकळ्या
• २ चिरलेले टोमॅटो
• १/४ कप खोवलेलं ओलं खोबरं
• कोथिंबीर
• १ चमचा तेल
• १ चमचा जिरं

Fansachi bhaji is a konkan special recipe. As kovla fanas or tender jackfruit is available in summer, this is summer special recipe. There are 2 types of fansachi bhaji viz. kovlya fansachi bhaji and garyanchi bhaji which is known as ukadgare. In older days not many veggies were available in Konkan. So people made veggies from the ingredients those were readily available with them. This is one such bhaji. Mostly kovlya fansachi bhaji is dry. But today I am making rassa to make it tastier. It looks nice and tastes just awesome. It looks like non veg rassa. We already have seen how to cut fanas. So, let’s make bhaji now. You can try this recipe at home and drop a comment for me. Ingredients:
• 250 gm chopped Jackfruit
• 2~3 Garlic cloves
• 2 chopped Tomatoes
• 1/4 cup grated fresh Coconut
• Coriander leaves
• 1 tsp Oil
• 1 tsp Cumin seeds
• Finely chopped Onion
• 2 tsp Malvani masala
• 2 tsp Red chili powder
• Salt to taste
• Water as needed

Method:
• Steam fanas in cooker on medium heat for 20-25 minutes. Make sure you don’t add any water in
fanas while steaming.
• For making masala blend garlic, tomatoes, fresh coconut, coriander leaves together into paste in
mixer. Masala or vatan is ready.
• Make sure you don’t use any water at all while blending.
• Heat up oil in a pan and add cumin seeds.
• When cumin seeds splutter add onion and fry until it gets golden color.
• Add the blended masala and fry together for about 5-6 minutes.
• When masala begins to release oil add malvani masala, red chili powder and mix well.
• Add salt and mix well.
• Add water and bring the gravy to boil.
• Add the cooked fanas and mix well.
• Simmer bhaji on medium hea for at least 7-8 minutes. Fansachi bhaji is all ready.
• You can have it with tandalachi bhakri or any other bhakri or roti too.
• It goes well with rice too.
