Puran poli is a traditional Maharashtrian recipe. We already have seen 2 recipes for puran poli. This recipe has a little variation. With holi round the corner, puran poli recipe is a must. Do try this recipe at home and drop a comment for me. You also can like, share and subscribe.

Ingredients:
• 1 cup Chana dal
• 3 cups Water
• 1/4 tsp Turmeric powder
• 1/4 tsp Oil
• A little less than 1 cup Sugar
• 1/2 tsp Cardamom powder
• 1/4 tsp Nut meg powder
• 1 cup Wheat flour
• 1 cup Maida
• Salt to taste
• 1/4 tsp Turmeric powder
• 1 tsp Oil
• Water
• Ghee / Oil

Method:
• Wash chana dal really good and soak it in enough water for about
5-6 hours.
• Transfer the soaked chana dal into a cooker and add water.
• Add turmeric powder and mix well.
• Add oil and close the lid.
• Due to addition of oil the dal doesn’t overflow while cooking and
turmeric powder gives nice color to puran.
• Cook on medium heat until 4 whistles.
• Open the lid and strain out excess water into a bowl.
• This water can be used to make katachi amti.
• Mash the cooked dal really good with a masher.
• Add sugar and mix well.
• Cook puran on medium heat really good until it thickens up.
• After about 10 minutes of cooking, the puran thicken up. Don’t let
it be much dry.
• As it contains sugar, it dries up as time passes. So don’t make it
too dry while cooking.
• Add cardamom powder, nut meg powder and mix well.
• Puran for puran poli is all ready.
• In a dish take wheat flour.
• Add maida, salt, turmeric powder and mix well.
• Add oil and mix well.
• Add water and knead soft dough.
• Add oil and knead it nice, soft and even.
• Cover and rest the dough for about 30-45 minutes.
• Take a small ball of dough and make it nice and even.
• Make unda from the dough as we make for ukadiche modak or
paratha.
• Fill a ball of puran into the unda and seal it. Remove the excess
dough.
• Dip it in dry flour and roll poli from it.
• Heat up a pan on medium heat.
• Transfer the poli on the pan.
• Roast until bubbles appear on upper side of the poli.
• When lower side is roasted well, flip the poli over and roast well
from other side as well.
• Spread some ghee on both sides and take poli off the pan.
• Puran poli is all ready.
• You can have puran poli with lots of ghee and katachi amti too.
• You can make 6-7 puranpoli from above mentioned ingredients.
