Kurdai is an important recipe in Maharashtrian households. We already have seen 2 kurdai recipes, wheat kurdai and rava kurdai. In both recipes you need to soak wheat and rava for 3 days. Today we are making instant kurdai means no soaking. You can try this hassle free recipe at home and drop a comment for me. Do not forget to like, share and subscribe.

Ingredients:
• 3 1/2 cups Water
• Salt to taste
• 1/4 tsp Papad khar
• 1 cup Rice flour
• Oil

Method:
• Heat up water in a pan and bring it to boil.
• When water begins to boil lower down the heat a little and add salt, papad khar. Mix well.
• Add rice flour and mix in quickly. No lumps of rice flour should be formed.
• Keep on stirring continuously.
• When all the lumps are removed and flour in mixed well, cover and steam on very low heat for
about 5 minutes.
• Remove the lid and mix well once again.
• Again cover and steam on very low heat for about 7-8 minutes.
• Remove the lid and mix it once more.
• Turn off the gas and rest it for about 10 minutes.
• Take chakali mould and fit medium thick shev dish in it.
• Grease the mould well with oil from inside.
• Mix the batter well once and transfer it into the chakali mould.
• Make kurdai on the plastic sheet.
• Dry under fan or shed and not under hot sun.
• When upper side is almost dry for about 4-5 hours, flip the kurdai over and dry well from other
side too.
• When both the sides are dried well, dry them under hot sun for just one day.
• Rice kurdai is all ready.
