Malupa is an Indian delicacy. It is specially made for the festivals like Diwali, Holi etc. It turns out soft, juicy and tastes just awesome. If you are bored of having the same sweets like shrikhand or sheera or kheer etc., then this is a good option for you. This is a must recipe for Holi. We are not using baking soda or khoya to make these malpua. But we are following traditional method. Yes, we are fermenting the batter to make it. The edges are nice and crispy and it Is soft and juicy inside. You can try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.
Ingredients:
• 1/2 cup Maida
• 1/2 cup Milk powder
• 1 tbsp fine Rava / Semolina
• 3/4 cup + 1 tbsp Milk
• 1 cup Sugar
• 3/4 cup Water
• Few Saffron strands (Optional)
• Cardamom powder
• Oil for frying
Method:
• Mix maida, milk powder and rava really good first and add milk to make batter.
• Beat the mixture really good. The batter should have pouring consistency.
• You can use 1 cup khava or mawa in place of milk powder.
• Cover and set it aside to ferment overnight or at least 6-8 hours.
• For making sugar syrup heat up a pan on medium heat and add sugar, water and saffron.
• Adding saffron is optional. You can skip it if you don’t want.
• Cook it together until it becomes just sticky, like gulabjam syrup.
• When sugar dissolves completely, continue cooking the mixture for just about 5 minutes more.
• When the syrup turns just sticky, turn off the gas and add cardamom powder.
• Mix well and sugar syrup is ready.
• Heat up oil in a pan on high heat for about 5 minutes and then turn the heat to low.
• Mix the batter well once and pour a ladleful batter at the center of the pan.
• Fry the malpua well on low heat until it gets nice golden color from both sides.
• When it puffs up and floats on the oil and lower side gets nice golden color, flip the malpua over
and fry well from both sides.
• When malpua gets nice golden color from both sides, take it out, drain excess oil and transfer it
into hot sugar syrup.
• Soak it well in sugar syrup from both sides and take out. Malpua is ready.
• You can make around 12-14 malpua from the proportion we used.
