पारंपारिक वाफोळी बनवण्यासाठी लागणारे साहित्य
• १ कप सुरती कोलम तांदूळ
• १/४ कप गहू
• २ मोठे चमचा उडीद डाळ

Let’s see how to make traditional recipe tandalachi vafoli. This is a very old Marathi recipe. In old times this was special dish in festival meals. But in course of time this was left behind and is now almost forgotten. But in many villages, it is still prepared for festivals and other special occasions. This is a sweet dish. It gets nice perforated texture. It is not only healthy but also tasty recipe. Basically, this recipe doesn’t need lot many ingredients. You can easily make it from vary few ingredients those are readily available in your kitchen!! If you ae bored of having same sweet dishes, then this is a good option for you. Ingredients:
• 1 cup Surti kolam Rice
• 1/4 cup Wheat
• 2 tbsp Urad dal
• 2 tbsp Chana dal
• 1/2 tsp Fenugreek seeds
• Water as needed
• 1 tsp Sunth / dry Ginger powder
• Salt to taste
• 1 tsp Cardamom powder
• 1/2 tsp Turmeric powder
• 3~4 tsp grated dry Coconut
• 1 tbsp Curd
• 1 tsp Fennel seeds
• Gudh / jaggery to taste
• A piece of Charcoal
• Ghee

Method:
• Blend rice, wheat, urad dal, chana dal and fenugreek seeds into coarse powder in mixer. The
powder should have texture like rava.
• Transfer the powder into a bowl and add water.
• Mix well and make thick batter like dosa batter.
• Soak it overnight so that it will ferment nicely like idli batter.
• Make sure that the consistency od batter should be a little thin before soaking as the pulses will
soak the water.
• Next morning add dry ginger powder, salt, cardamom powder, turmeric powder, dry coconut, curd,
fennel seeds and jaggery and mix everything well together.
• For giving smoky flavor, heat up charcoal really good and transfer it into a katori.
• Place the katori into the batter and add ghee.
• Cover it and rest it for about 5 minutes.
• Remove the lid and take the katori out.
• Grease a dish well with ghee and pour the batter in it.
• Spread the batter evenly and garnish with dry coconut.
• You can use dry nuts for garnishing if you want.
• Heat up water in a steamer and when it begins to boil, place the dish into it.
• Steam the vafoli on medium heat for about 10 minutes.
• Insert a knife into the vafoli. If it comes out clean, it means the vafoli is steamed well.
• Take the dish out and take the vafoli out with the help of knife.
• Vafoli is ready. Cut it into pieces.
• You can have it as it is or with gulavani.
• You can keep the dry powder ready and make vafoli whenever you want.
