Let’s make Marathi recipe vangyache kurkurit kaap today. This is a very easy and simple recipe. It is a good side dish or snack recipe. This is no onion, no garlic recipe. This very simple and quick recipe. We already have seen lot many recipes of vange or brinjal. This is yet another lip-smacking side dish. Vangi being a versatile sabzi you can make many dishes from it. These are pan fried slices which turn out nice, crispy and crunchy. Vangyache kaap are a type of fritters those are shallow fried. The slices are coated with spices and hallow fried on a pan. These not only look nice but taste super delicious. You can try this recipe at home and drop a comment for me. Ingredients:
• 2 tsp Red chili powder
• 1 tsp Coriander powder
• 1/2 tsp Garam masala
• Salt to taste
• Finely chopped Coriander leaves
• 1 bharatache Vange
• Salt to taste
• Lemon juice
• 1/2 cup fine Rava
• Oil for shallow frying
• Oil as needed

Method:
• Mix red chili powder, coriander powder, garam masala, salt and coriander leaves well together
Masala for making kaap is ready.
• Wash the brinjal well and dry it.
• Cut it into slices and sprinkle salt on it.
• Sprinkle the masala on the slices and coat them well with it from both sides.
• Sprinkle lemon juice on each slice.
• Add salt and left over masala into fine rava and mix well.
• Coat each slice well with the rava from both sides.
• Heat up oil in a skillet and place the slices on it.
• Fry well until lower side is fried well and turns nice and crispy.
• When lower side is almost shallow fried, spread a little oil on upper side and flip the slices over.
• Fry the slices well from other side too.
• When both the sides are fried well, take them off into a dish. Vangyache kaap are ready.
• Make sure you don’t keep them ready before time as they will become soft and lose the crunch.
• You can have them as it is or serve them as side dish.
• These go fantastic with fodniche varan and bhat.
