Khaman idly is popular Indore special street food recipe. Though a different it tastes just awesome. It looks pretty and required very few ingredients. We are not using curd or buttermilk for this recipe. This can be a good breakfast option. It turns out nice, soft and spongy. You can try this recipe at home and drop a comment for me. Ingredients:
• 1 cup Besan
• 1/4 tsp Turmeric powder
• 1/2 tsp Sugar
• Salt to taste
• 1 tsp Lemon juice
• 2 tsp hot Oil
• 1/2 cup Water
• 1/2 tsp Eno fruit salt
• 1/2 tsp Water
• 1 tsp powdered Sugar
• 4~5 tsp Water
• Oil
• Mustard seeds
• Hing
• White Sesame seeds
• Curry leaves
• Green chilies
• Finely chopped Coriander leaves
Method:
• Sieve besan into a bowl and turmeric powder, sugar, salt, hot oil.
• Mix everything well together and add water.
• Mix well for about 4-5 minutes so that the batter will be light and fluffy.
• Add Eno fruit salt, water to activate it and mix well quickly.
• You can use 1/4 cup curd or buttermilk in place of lemon juice.
• Grease the idly mold well with oil and add batter in it.
• Stack the idly molds on idly stand.
• Heat up about 1” water at the base of the idly cooker and transfer the idly stand into it.
• Close the lid and steam idly on medium heat for about 10-15 minutes.
• After steaming idly for 15 minutes turn off the gas and let the idlies be in the cooker for
another 10 minutes.
• Open the lid and take the stand out.
• When idly cools down a little take it out with the help of spoon or knife.
• Take powdered sugar in a bowl and add water. You can add a little salt if you want.
• Mix well and add this sugar syrup on idlies.
• Due to this sugar syrup idly tastes better.
• You can skip sugar syrup if you don’t want.
• For tadka, heat up oil in a tadka pan.
• Add mustard seeds and let them pop up.
• Add hing, sesame seeds, curry leaves, green chilies and cover the tadka for about 3-4 minutes.
• Add the tadka on idly and khaman idly is all ready. Garnish with coriander leaves.
• You can have this as it is or serve it with sweet tamarind chutney and green spicy chutney.
• You can make 12 idlies from 1 cup besan.
• You can dhokla instead of idly.
