There are lot of fresh carrots available in the market now. So far we have seen lot many gajar recipes like lonache, halwa. Today we will make vadi or burfi. It tastes just awesome. It is very and simple recipe. Do try this recipe at home and drop a comment for me. Do not forget to like, share and subscribe.
Ingredients:
• 1 tsp Ghee
• 3 cups grated Carrot
• 1 cup Sugar
• 125 grated Khoya / Mawa
• Few chopped Almonds
• Few chopped Cashew nuts
• 1 cup Desiccated coconut
• 1/2 tsp Cardamom powder
• Few sliced Almonds
• Few sliced Pistachios
Method:
• Heat up a pan on medium heat.
• Add ghee, carrot and mix well.
• Fry on medium heat for about 4-5 minutes.
• Add khoya, sugar and mix well.
• You can add 1 cup milk powder in place of khoya.
• Add almonds, pistachios and mix well.
• Fry the mixture on medium heat for about 7-8 minutes or the
mixture thickens up a little.
• Add desiccated coconut and mix well.
• It is not compulsory to add desiccated coconut but it helps to
absorb moisture in the mixture and gives nice flavour to it.
• If you don’t add coconut then you can cook the mixture until it
thickens up really good.
• When the mixture thickens up really good and comes together
like dough, add cardamom powder and mix well.
• Take the mixture out into a dish and spread it evenly.
• Garnish with slices of almonds and pistachios and press them a
little.
• Rest the mixture at room temperature for about 2-3 hours to set.
• No need to set it in freeze.
• If you set the mixture in freeze then it will thicken up until in
freeze and later it may release moisture.
• Cut it into pieces and gajarachi vadi is already.
