Jwariche dhirade is a traditional recipe. In Marathwada region of Maharashtra jwariche dhirade is eaten with aam ras. Yes, you heard right and believe me, it tastes just awesome. My grandmother used to make it. Do try this combination in this mango season and drop a comment for me. Do not forger to like, share and subscribe.
Ingredients:
• 1 cup Jawar flour
• 1/4 cup Wheat flour
• 2 tsp fine Rava / Suji
• Salt to taste
• 1/2 tsp Cumin seeds
• 1/4 tsp Ajwain / Carom seeds
• Green chili-Garlic paste (7~8 Garlic cloves & 4~Green chilies)
• About 4 cups Water
• Finely chopped Coriander leaves
• Oil
Method:
• In a bowl take jawar flour.
• Add wheat flour, rava and rava.
• You can use rice flour in place of wheat flour.
• Crush cumin seeds and ajwain a little in your palms and add.
• Add green chili-garlic paste, water and make thin batter.
• Add coriander leaves and mix well.
• Heat up a pan on medium heat.
• Brush a little oil on the pan.
• Mix the batter once well and start making dhirade.
• Start pouring the batter from the edge and end up at the center of
the pan.
• No need to cover while cooking.
• Spread a little oil along the edge.
• After cooking for about 2-3 minutes from one side flip the dhirade
over.
• Roast well for about 2-3 minutes from other side as well.
• If the jawar flour is a little older then dhirade may have cracks.
• In that case cover and cook the dhirade so that it won’t get
cracks.
• When dhirade is roasted well from both the sides take it off the
pan into a dish.
• Serve jwariche dhirade with aam ras.
